The two most common species used are Saccharomyces cerevisiae (Brewers Yeast) used for Ale and classed as a top-fermenting yeast. Then there is S. carlsburgiensis / Saccharomyces carlsbergensis used for lager and classed as bottom-fermenting yeast.
